Crunchy, toasty, a tiny bit salty—these nuts make a great after-school snack to keep you going until dinnertime.

2 cups
unsalted roasted almonds
1 1⁄2 teaspoon
olive or canola oil
1 1⁄2 teaspoon
low-sodium soy sauce


  1. Turn the oven on and set it to 250 degrees.
  2. Put the almonds, oil, and soy sauce in the bowl and mix well.
  3. Pour the almonds onto the baking sheet and put the sheet in the oven.
  4. Bake until fragrant and browned a shade darker, about 10 minutes. Set aside to cool.
  5. Serve right away or cover and refrigerate up to 1 week.


Almonds grow inside a shell in the center of a green fruit, on trees that are in the same family as plums, apricots, peaches, nectarines, and cherries. If you’ve ever broken open a pit from one of those fruits, you’ve probably seen a kernel that looks sort of like an almond, and that’s why.
